Truffle hunting in Assisi

The Umbrian region is the land of truffles par excellence. The precious black truffle, with its unmistakable aromatic scent, also known as “black diamond”, is mainly found along the course of the Nera river, in the province of Perugia. It grows in calcareous and clayey soils and its size varies from the size of a walnut to that of an apple: rounded or irregular, with a rough but not angular surface, it is one of the most sought after and unique products in Italy.
Umbrian cuisine based on truffles has ancient roots: eggs with thinly sliced truffles on top, omelettes and homemade strangozzi are just some of the recipes reported in the most ancient texts and handed down from generation to generation.
Once upon a time, Umbrian cuisine based on truffles was reserved only for the privileged few who could afford the purchase of this precious ingredient. Starting from the 1950s new and creative recipes appeared, which in a short time became a benchmark of the territory.

If you are intrigued and want to discover the intricacies of this product, this experience can make you live the magic of the “black diamond”.
You will be taken, early in the morning, on an adventurous truffle hunt, through an accessible and flat path among the Umbrian hills.
The truffle finder will guide you with his trusty dog through a path in the woods and will show you how to find truffles and the different types according to the seasons.

After spending the morning on this exciting truffle hunt, the experience will continue at a local winery for a guided tour.
Here, you will be served with a typical four-course lunch, paired with six different organic wines, where you can enjoy traditional Umbrian dishes seasoned with the truffle you found in the morning.

ADVICE: It is recommended that you dress comfortably and bring a jacket with you in case of light rain. It is important to know any food allergies and intolerances before the experience begins.
In case of bad weather, it will be possible to take part in a Cooking Class, in which a professional chef will guide you step by step in the composition of the dishes, showing you carefully how truffles are used in the kitchen. This will be followed by a four-course lunch paired with local wines.
